Coconut Macaroon Coconut Macaroon


  • 1 Package Archway Coconut Macaroons
  • 1/2 cup condensed milk
  • 8 tablespoons butter, cut into pieces
  • 3/4 cup good quality dark chocolate
  • 3/4 cup good quality milk chocolate
  • 1/2 cup sugar
  • 1 1/4 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup flour


  1. Preheat oven to 350˚F.
  2. Grease a 8x8 baking dish.
  3. In a bowl, break up macaroons and combine with condensed milk.
  4. Press mixture into an even layer in the baking dish. Set aside.
  5. In a saucepan melt butter. Add in chocolate and melt.
  6. Once melted, remove from heat.
  7. In a mixing bowl combine sugar, vanilla extract, and eggs.
  8. Slowly add in the melted chocolate.
  9. Slowly add in the flour, beating after each addition.
  10. Pour chocolate mixture over the coconut layer.
  11. Bake for 35 minutes or until a toothpick inserted comes out clean.
  12. Once cool, cut into desired pieces.
