  • 9 oz. Archway Windmill cookies
  • 1/2 cup packed brown sugar
  • 3 T. flour
  • 1/2 tsp. cinnamon
  • 1 large egg, beaten
  • 1 cup heavy whipping cream
  • 1 tsp. vanilla extract
  • 2 large thinly sliced, peeled peaches


  1. Preheat oven to 400ºF.
  2. Spray an 8x8 square casserole dish with cooking spray.
  3. Using 6 cookies, make one flat layer in the bottom of the dish.
  4. In a large bowl, combine the brown sugar, flour, and cinnamon.
  5. In a medium bowl, whisk the egg, heavy cream, and vanilla. Add the mixture to the dry ingredients, stirring well.
  6. To the bowl, add the sliced peaches, stirring until well combined.
  7. Spoon the mixture on top of the arranged cookies in the dish, spreading evenly.
  8. Bake for 10 minutes
  9. Reduce the temperature to 350ºF and bake an additional 35 minutes.
  10. Cover the dish with the remaining 6 cookies in one layer, with the windmill side facing up.
  11. Cook 10 minutes more, or until filling is set .
  12. Cool 10 minutes and cut into 6 pieces.
  13. Serve warm or cool completely.
  14. Store leftovers in the refrigerator.
