Easy Molasses Peach Ice Cream Pecan Cookie Bars by Barbara Mayo
Makes 6 sandwiches
This Recipe was made with
Archway Iced Molasses
2 pints or 1/2 gallon peach ice cream
1/4 cup Peach Schnappes
2 cups toasted chopped peacns
Place soften ice cream in mixing bowl add peach schnapps and mix well. Place in freezer for 10 minutes.
Remove ice cream from freezer and place 1-½ large scoops onto one cookie and spread evenly to sides.
Top with second cookie then roll all sides of cookie in toasted chopped pecans.
Place on cookie sheet cover tightly with plastic wrap and return to freezer for 45 minutes.
Or you can place in individual sandwich bags and have anytime on at a time.
