Coconut Macaroon Coconut Macaroon

Ingredients

  • 2 boxes of Archway Coconut Macaroons
  • 1 (8 oz) package of cream cheese
  • 1/4 C white sugar
  • 3 Tbs. milk
  • 1 egg
  • 1/4 C sour cream
  • 1/2 tsp. orange extract
  • 1 Tbs. flour

Directions

  1. Heat oven to 350ºF.
  2. Mix all ingredients (except the macaroons) in a blender until smooth.
  3. Press macaroons into the bottom of mini muffin cups (one into each cup).
  4. Fill macaroon cups with cheesecake filling.
  5. Bake 15-20 minutes.
  6. Cheesecakes will puff and crack on the top.
  7. Remove from oven and let rest in the pan for 15 minutes.
  8. Invert pan onto a towel and immediately flip them back over right-side up
  9. Allow to cool completely before serving.
