Mini Coconut Orange Cheesecakes by Archway Cookies
This Recipe was made with
2 boxes of
Archway Coconut Macaroons
1 (8 oz) package of cream cheese
1/4 C white sugar
3 Tbs. milk
1/4 C sour cream
1/2 tsp. orange extract
1 Tbs. flour
Heat oven to 350ºF.
Mix all ingredients (except the macaroons) in a blender until smooth.
Press macaroons into the bottom of mini muffin cups (one into each cup).
Fill macaroon cups with cheesecake filling.
Bake 15-20 minutes.
Cheesecakes will puff and crack on the top.
Remove from oven and let rest in the pan for 15 minutes.
Invert pan onto a towel and immediately flip them back over right-side up
Allow to cool completely before serving.
