Gingersnap Gingersnap

Ingredients

  • 2 lbs. ground pork
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 egg
  • 1 cup Archway Gingersnap cookies, crushed into fine crumbs
  • ¾ cup milk

Sauce:

  • ¼ cup tomato sauce
  • ¼ cup cider vinegar
  • ½ cup brown sugar
  • 1 teaspoon Dijon mustard

Directions

  1. Mix together the first 6 ingredients.
  2. Pat into a loaf pan.
  3. Mix all sauce ingredients together and pour over the top of the meatloaf.
  4. Bake at 350 degrees for 45 minutes.
